Fig Salad with Raspberry Dressing

Preparation Time : 25 mins

Servings: 4

Ingredients

500 g rocket and baby spinach leaves
50 g raspberries
2 tbs olive oil
2 tbs balsamic vinegar
1 tsp sugar
salt and pepper
4 fresh figs
100 g smoked ham

Instructions

  1. Set aside 16 raspberries for the salad.
  2. Press the remaining raspberries through a sieve and make a dressing using the raspberry juice, olive oil, vinegar, sugar, salt and pepper.
  3. Wash the rocket and spinach leaves.
  4. Wash and quarter the figs.
  5. Cut the ham into strips.
  6. Toss everything together.
