Smoked Salmon Salad

Ingredients

Salad:
mixed salad greens
cress
1 bunch of radishes
2 tomatoes
100 g smoked salmon
1 small tin of sweetcorn
Dressing:
4 tbs olive oil
4 tbs balsamic vinegar
1 tsp honey
2 tbs milk
1 tsp mustard
salt and pepper

Instructions

  1. Wash the salad greens and cress and tear into bite-sized pieces.
  2. Remove the radish ends and slice the radishes.
  3. Cut the tomatoes into quarters.
  4. Slice the salmon. Drain the sweetcorn.
  5. For the dressing, mix together olive oil, balsamic vinegar, honey, milk and mustard, and season with salt and pepper.
  6. Toss everything together shortly before serving.
