Fruit Cream Parfait

Servings: 4

Ingredients

500 g strawberries
4 kiwifruit
7 tbs sugar
1 lemon, squeezed
500 g mascarpone
2 tbs advocaat
100 ml whipping cream
1/4 tsp vanilla paste or 1 tsp vanilla essence
1 tbs shredded coconut
mint leaves to decorate

Instructions

  1. Wash and dice the strawberries. Purée them finely with 2 tbs sugar and 1 tbs lemon juice.
  2. Peel and dice the kiwifruit. Purée with 2 tbs sugar and 1 tbs lemon juice, as with the strawberries but separately.
  3. Mix together the mascarpone, advocaat, 3 tbs sugar and shredded coconut.
  4. Whip the cream with the vanilla and a dash of sugar. Fold into the mascarpone mixture.
  5. Arrange in layers.
  6. Decorate with strawberries and mint leaves.
