Raspberry Cream Parfait

Preparation Time : 25 mins

Servings: 4

Ingredients

150 ml whipping cream
1/4 tsp vanilla paste or 1 tsp vanilla essence
150 g raspberries, fresh or frozen
250 g mascarpone
3 tbs sugar
1 tsp lemon juice
mint leaves
fresh raspberries to decorate

Instructions

  1. Mix the cream, vanilla and a bit of sugar and whip.
  2. Mix all other ingredients with a stick blender.
  3. Fold in the cream.
  4. Serve decorated with raspberries and mint leaves.
