Juicy Steaks in Brandy and Red Wine Sauce

Ingredients

2 steaks
1 tbs oil
25 g butter
salt
2 tsp ground green peppercorns
2 shallots
8 white button mushrooms
1 tsp brandy
100 ml red wine (6 tbs 2 tsp)
3 tbs crème fraîche

Instructions

  1. Dice the shallots and mushrooms.
  2. Heat the oil and butter in a pan. Dress the steaks with salt and green pepper and fry in the pan on each side.
  3. Set the meat aside and fry the shallots and mushrooms.
  4. Return the meat to the pan, add the brandy, deglaze with the wine and reduce until half remains.
  5. Add the crème fraîche and reduce a little.
