Leek and Cheese Soup

Cook Time: 1 hour

Servings: 8

Ingredients

1 kg mince
1 egg
breadcrumb mix
salt and pepper
250 g white button mushrooms
1 onion
2 leeks
2 l vegetable stock
200 g cream cheese
250 ml cream (1 cup)

Instructions

  1. Mix the mince with the egg, a bit of breadcrumb mix, salt and pepper. Fry and then set aside.
  2. Dice the mushrooms and onion, slice the leeks into rings and fry.
  3. Add the stock and reduce for 30 min.
  4. Add the mince, cream cheese and cream. Cook for another 30 min., seasoning again if needed.
