Mussels

Servings: 4

Ingredients

1.5 kg mussels
2 cloves of garlic
2 onions
1/2 celeriac root
1 tbs butter
1/2 tsp cayenne pepper
350 ml dry white wine (just under 1 1/2 cups)
1 tbs lime juice
parsley

Instructions

  1. Wash the mussels, discarding all broken and open shells.
  2. Cut the garlic, onions and celeriac into small pieces.
  3. Heat butter in a large pot and sauté the garlic, onions and celeriac.
  4. Add cayenne pepper.
  5. Lightly sweat everything, deglaze with white wine and bring to the boil.
  6. Add lime juice and chopped parsley.
  7. Add the mussels, cover the pot and cook for 15 min. until the shells open.
  8. Discard the unopened shells and then serve.
