Pad Thai with Shrimp

Ingredients

20 raw shrimp
400 g rice noodles
150 g mung bean sprouts
4 eggs
4 spring onions
4 cloves of garlic
4 tsp brown sugar
2 tbs palm sugar
2 1/2 tbs fish sauce
4 tbs oyster sauce
4 tbs roasted peanuts, roughly crushed
chilli powder
2 limes
peanut oil

Instructions

  1. Soak the rice noodles in hot water for a few minutes until flexible.
  2. Cut the spring onions into 2 cm pieces.
  3. Finely chop the garlic.
  4. Wash the sprouts in a sieve and drip drain.
  5. Heat 2 tbs oil in a wok.
  6. Quickly fry the garlic and push to the side.
  7. Quickly fry the shrimps and push to the side.
  8. Whisk the eggs and add.
  9. Add sugar, fish sauce and oyster sauce and stir everything well.
  10. Add the noodles and 1 cup water and cook for 1 min.
  11. Add the spring onions and bean sprouts.
  12. Serve with lime halves, chilli powder and peanuts.
