Tagliatelle with Shrimp

Preparation Time : 40 mins

Servings: 4

Ingredients

400 g tagliatelle (egg noodles)
750 g shrimps
400 ml coconut milk
200 ml milk (3/4 cup)
1 onion
2 bunches of spring onions
1 chilli
1 piece of ginger
2 cloves of garlic
2 tsp red curry paste
chilli powder
soy sauce
turmeric
salt and pepper
2 tbs oil

Instructions

  1. Wash the shrimps, season with a bit of soy sauce, salt, pepper and oil, and marinate for 1 hour.
  2. Dice the onion.
  3. Finely slice the ginger, garlic and spring onions.
  4. Quickly fry the onion, garlic and ginger in a pan, add the shrimps and cook for another 5 min.
  5. Cook the pasta.
  6. Add milk and coconut to the pan and reduce the mixture.
  7. Season with curry paste, chilli powder, turmeric, soy sauce, salt and pepper.
  8. Serve the pasta with the sauce.
