Paella

Preparation Time : 45 mins

Servings: 4

Ingredients

400 g chicken breasts
200 g cod
1 yellow pepper
3 cloves of garlic
1 onion
olive oil
1/2 cup peas
1 cup olives
250 g rice
parsley
1 tsp saffron powder
food colouring, if a stronger colour is desired
300 g mussels
12 shrimps

Instructions

  1. Cut the chicken into bite-sized portions, cook in a pan with a bit of oil and set aside.
  2. Cook the cod in a pan likewise and set aside.
  3. Dice the pepper, chop the garlic and onion finely and fry in the large pan with oil.
  4. Add the chicken, cod, peas, olives, rice, 500 ml water (2 cups), chopped parsley and saffron powder (and food colouring if desired).
  5. Wash the mussels, discarding the opened shells. Add only the closed shells to the pan and press into the rice.
  6. Put the lid on and reduce everything for around 10 min.
  7. Next add the shrimp and further reduce for another 10 min. or even longer (there should still be a little liquid remaining).
  8. Season with salt and pepper and garnish with parsley.
