Tasty Fish Soup

Ingredients

400 g shellfish or fish fillets of your choice
12 shrimps
2 carrots
1 celery stalk
1 onion
1 potato
1 clove of garlic
1 red chilli
olive oil
300 ml white wine (1 cup 5 tsp)
500 ml fish or vegetable stock (2 cups)
3 tomatoes
1 tsp tomato paste
1 bay leaf
1 lemon
1/2 tsp saffron
1/2 bunch of parsley, chopped
1/2 bunch of chives, chopped

Instructions

  1. Dice the carrots, celery, onion and potato.
  2. Cut the garlic and chilli into fine pieces.
  3. Cook the vegetables in a pot with oil.
  4. Deglaze with white wine and add the stock.
  5. Dice the tomatoes and add, along with the tomato paste and bay leaf.
  6. Zest a bit of lemon peel and add.
  7. Boil for 15 min., then purée and sieve, retaining only the liquid.
  8. Cut the fish fillets into bite-sized pieces, or, if using shellfish, clean (discarding open shells).
  9. Add to the vegetable soup along with the shrimps, saffron, parsley and chives.
  10. Boil for 5 min. and discard the unopened shells.
  11. Serve with baguette and garnish with parsley.
