Pav Bhaji

Servings: 4

Ingredients

2 onions
1 garlic clove
3 tomatoes
1/2 red bell pepper
2 potatoes
1 carrot
1/4 cauliflower
100 g green beans
oil
2 tsp garam masala
1/2 tsp ground coriander
1/2 tsp ground turmeric
1 tsp chilli powder
100 g frozen peas
250 ml hot water
salt
3 tbs butter
1 red onion
1 small bunch of fresh coriander
1 lime
4 hamburger buns

Instructions

  1. Finely chop the onions and garlic.
  2. Finely dice the tomatoes and pepper.
  3. Peel and dice the potatoes and carrot.
  4. Wash the cauliflower, remove the stalk, and cut up the florets.
  5. Wash and halve the beans.
  6. Sauté the onions and garlic in a pan with oil.
  7. Add the masala powder, coriander, turmeric and chilli and fry briefly.
  8. Add 3 tbs water and simmer a little.
  9. Add the vegetables and a bit of salt.
  10. Add the hot water, cover and cook for around 15 minutes until the vegetables are soft.
  11. Drain any excess water.
  12. Add butter and purée everything.
  13. Serve with chopped red onion, chopped coriander leaves, lime quarters and buns.
