Pea Soup

Servings: 4

Ingredients

1 onion
1 garlic clove
1 tbs butter
750 ml vegetable stock
500 g frozen peas
1/2 bunch of coriander
150 ml cream
salt, pepper, cayenne pepper
a pinch of sugar

Instructions

  1. Peel and dice the onion and garlic.
  2. Sauté in a pan with butter.
  3. Add vegetable stock and peas and cook for 15 minutes.
  4. Add coriander leaves and cream.
  5. Purée with a stick blender.
  6. Season with salt, pepper, cayenne pepper and a pinch of sugar to taste.
