Quinoa Salad with Mozzarella

Servings: 4

Ingredients

1 cup quinoa
vegetable stock
1/2 cucumber
2 tomatoes
1 mozzarella ball
100 g sweetcorn
1 garlic clove
2 tbs olive oil
1 lemon, squeezed
basil leaves
oregano
salt and pepper

Instructions

  1. Rinse the quinoa under hot water in a sieve.
  2. Bring water to the boil in a pot with the vegetable stock.
  3. Cook the quinoa in the pot for 15 minutes, drain, and leave in a bowl to cool.
  4. Slice the cucumber, tomatoes and mozzarella and add to the bowl, along with the sweetcorn.
  5. Add finely chopped garlic and the olive oil.
  6. Season with salt, pepper, oregano, basil and lemon juice to taste.
