Quinoa Salad with Sugar Snaps

Ingredients

1 cup quinoa
vegetable stock
2 tomatoes
1 bell pepper
200 g sugar snap peas
vegetable stock
1 garlic clove
2 tbs olive oil
1 lemon
salt and pepper

Instructions

  1. Rinse the quinoa under hot water in a sieve.
  2. Bring water to the boil in a pot with the vegetable stock.
  3. Cook the quinoa in the pot for 15 minutes, drain, and leave in a bowl to cool.
  4. Chop the tomatoes and the pepper and add to the bowl.
  5. Sear the sugar snaps in a pan with a little oil for 10 minutes and add.
  6. Add finely chopped garlic and oil.
  7. Add salt, pepper and lemon juice to taste.
