Raspberry Dessert

Ingredients

250 g raspberries
1 tsp vanilla essence
1 tbs sugar
250 g mascarpone
150 g quark
150 g plain yoghurt
2 tbs sugar
200 ml whipping cream
12 sponge fingers

Instructions

  1. Mix the raspberries with vanilla and 1 tbs sugar in a blender.
  2. Stir the mascarpone, quark, yoghurt and 2 tbs sugar until creamy. Whip the cream and fold into the mixture.
  3. Crumble the sponge fingers.
  4. Arrange as you wish in glasses (e.g. layered).
