Red Cabbage Salad

Preparation Time : 1 hour

Servings: 12

Ingredients

1 red cabbage (around 1.5 kg)
1 lemon
2 tbs water
5 tbs sunflower oil
1 tsp salt
a pinch of pepper
1 tsp sugar
1 onion
1 red bell pepper
1 carrot
1 apple

Instructions

  1. Remove wilted cabbage leaves. Cut the cabbage into quarters, cut out the core, chop the cabbage into fine strips and add salt.
  2. Squeeze the lemon and add the juice.
  3. With your hands, bruise thoroughly for 5 minutes.
  4. Add water and oil.
  5. Season with salt, pepper and sugar.
  6. Slice the onion into fine rings.
  7. Remove the seeds from the pepper and cut the pepper into strips.
  8. Peel and grate the carrot.
  9. Remove the apple core and grate the apple.
  10. Mix everything together and leave for at least 2 hours to absorb flavours.
