Coleslaw with Apple and Pepper

Preparation Time : 1 hour

Servings: 12

Ingredients

1 cabbage (around 1 kg)
3 carrots
2 apples
1 onion
1 red bell pepper
1 tbs lemon juice
250 g mayonnaise
150 g natural yoghurt
1 tsp sugar
a pinch of cayenne pepper
salt and pepper

Instructions

  1. Wash the cabbage, remove the core and chop into fine strips.
  2. Peel and grate the carrots.
  3. Remove the apple core and dice finely.
  4. Finely dice the onion.
  5. Remove the seeds from the pepper and cut the pepper into small pieces.
  6. Mix everything together and leave for at least 2 hours to absorb flavour.
  7. Add salt and pepper to taste.
