Red Pepper Soup

Servings: 4

Ingredients

4 red peppers
3 large onions
2 red chilli peppers
2 tbs butter
5 tsp tomato paste
4 tbs flour
1500 ml vegetable stock
2 tsp white wine vinegar
5 cloves of garlic
4 tbs crème fraîche
1 tbs paprika
a pinch of sugar
salt and pepper
basil and cream to serve

Instructions

  1. Chop the peppers.
  2. Dice the onions and cut the chillies into fine pieces.
  3. Fry in a pot with the butter.
  4. Add the tomato paste and flour.
  5. Add the stock and bring to the boil.
  6. Add the vinegar, garlic cloves, crème fraîche, paprika and sugar.
  7. Purée with a stick blender and reduce a little.
  8. Add salt and pepper to taste.
  9. Serve garnished with basil and cream.
