Roast Leg of Lamb

Servings: 4

Ingredients

800 g leg of lamb
1 lemon
salt and pepper
3 cloves of garlic
1 onion
750 g waxy potatoes
2 tsp rosemary
olive oil

Instructions

  1. Squeeze the lemon and rub the juice into the meat. Season with salt and pepper.
  2. Cut the garlic into fine pieces.
  3. Dice the onion.
  4. Peel and slice the potatoes.
  5. Pierce the lamb leg in a few places with a knife and push rosemary and garlic inside.
  6. Preheat the oven to 180°C, 350°F or gas 4. Oil a roasting dish, place the leg inside and surround with the potatoes and onion. Pour in a cup of water and a little oil.
  7. Cook for 1 hour on the middle rung, turning the potatoes every now and then.
  8. Garnish with thyme.
