Shish Kebabs

Servings: 4

Ingredients

500 g lamb
wooden skewers
Marinade:
1 tsp lime zest
1 tsp chilli flakes
1 onion
2 cloves of garlic
1 tbs olive oil
Sauce:
250 ml buttermilk (1 cup)
250 ml Greek yoghurt (1 cup)
125 ml crème fraîche (1/2 cup)
2 cloves of garlic
100 g cucumber
salt and pepper

Instructions

  1. Cut the lamb into bite-sized portions.
  2. For the marinade, mix together the lime zest, chilli flakes, finely chopped onion and garlic and olive oil.
  3. Marinate the lamb in the mixture for 1 hour.
  4. Soak the wooden skewers in water for 15 minutes.
  5. Skewer the meat and cook in a pan or on the barbecue.
  6. For the sauce, combine buttermilk, yoghurt, crème fraîche, 2 crushed garlic cloves, finely chopped cucumber, salt and pepper, mix well and leave to sit so the flavours can infuse.
