Spare Ribs

Servings: 4

Ingredients

4 ribs
2 onions
200 ml tomato ketchup
2 tbs brown sugar
1 tbs Worcestershire sauce
2 tbs vinegar
4 tbs honey
salt and pepper
vegetable oil
chilli flakes

Instructions

  1. Dice the onions and cook in oil.
  2. Add sugar and cook until caramelised.
  3. Add Worcestershire sauce, ketchup, vinegar and honey, and bring to the boil.
  4. Season with pepper, salt and chilli flakes.
  5. Pour 3/4 of the sauce over the ribs and place in an oven tray. For a stronger flavour, leave the ribs to marinate for several hours.
  6. Cook on the barbecue or in the oven for 60 min. at 200°C, 390°F or gas 6. After 30 min., turn the ribs.
  7. Serve the ribs with the rest of the sauce.
