Strawberry Tiramisu

Ingredients

2 eggs, separated, fresh
3 tbs sugar
250 g mascarpone
14 tbs berry juice (putting mixed berries from the freezer in a blender may be even better) or orange juice
120 g sponge fingers
500 g strawberries
1 tbs cocoa

Instructions

  1. Combine yolks and sugar, then add the mascarpone.
  2. Beat the egg whites and fold in.
  3. Heat the berry or orange juice. Dunk the sponge fingers well in the juice.
  4. Create a layer of fingers in a round serving dish or cake tin.
  5. Next a layer of strawberry halves.
  6. Then a layer of mascarpone mixture, followed by another layer of sponge fingers and the mascarpone to finish.
  7. Dust with cocoa before serving and only consume fresh.
