Tiramisu

Ingredients

2 eggs, separated, fresh
3 tbs sugar
250 g mascarpone
150 ml black coffee, preferably espresso
1 tbs amaretto
1 tbs sugar
100 g sponge fingers
3 tbs cocoa

Instructions

  1. Combine yolks and sugar, then add the mascarpone.
  2. Beat the whites and fold into the yolk mix.
  3. Combine coffee, amaretto and sugar in a small bowl.
  4. Dunk the sponge fingers into the coffee mix and lay in a serving bowl.
  5. Layer with coffee and mascarpone, followed by another layer of fingers.
  6. The final layer should be coffee and mascarpone.
  7. Refrigerate for 5 or more hours, sifting cocoa over the top before serving.
  8. Only consume fresh.
