Sweet and Sour Pork

Servings: 4

Ingredients

500 g pork
2 tbs soy sauce
1 egg white
a pinch of salt
2 onions
1 tomato
2 cloves of garlic
1 piece of ginger
2 carrots
2 tbs soy sauce
3 tbs sherry
3 tbs tomato ketchup
250 g tinned pineapple chunks
2 tbs vinegar
3 tbs brown sugar
a pinch of salt
200 ml oil (just over 3/4 cup)
rice

Instructions

  1. Create a marinade using 2 tbs soy sauce, egg white and a pinch of salt.
  2. Marinate the pork in the mixture for 1 hour.
  3. Dice the onions and tomato, cut the garlic and ginger into fine pieces, cut the carrots into diagonal slices.
  4. For the sauce, mix together the other 2 tbs soy sauce, sherry, ketchup, pineapple juice, vinegar, sugar and a pinch of salt.
  5. Fry the meat in hot oil.
  6. In another pan with a little oil, fry the garlic, onions, ginger, tomato and carrots.
  7. Add the sauce and pineapple chunks and bring to the boil.
  8. Add the meat and serve with rice.
