Thai Green Curry

Servings: 4

Ingredients

500 g meat (e.g. chicken breasts)
1 lemongrass stalk
2 cm fresh ginger root
2 tbs Thai green curry paste
2 tbs oil
500 ml coconut milk (2 cups)
200 g green beans
5 Thai aubergines
6 kaffir lime leaves
lime juice
25 g brown sugar or palm sugar
2 tbs fish sauce
Thai basil
rice

Instructions

  1. Wash the lemongrass stalk. Remove the outer leaves and upper half. Slice finely.
  2. Finely slice the ginger.
  3. Fry the lemongrass, ginger and curry paste in oil.
  4. Add coconut milk and slowly bring to the boil.
  5. Cut the meat into bite-sized portions, add and simmer.
  6. Wash the beans and cut off the ends.
  7. Remove the stalks from the aubergines and cut into quarters.
  8. Add the beans, aubergines and lime leaves to the rest and cook.
  9. Season with lime juice, sugar and fish sauce.
  10. Garnish with Thai basil and serve with rice.
