Thai Shrimp Soup

Ingredients

200 g shrimp
1 onion
1 clove of garlic
1 green chilli
1 red chilli
2 lemongrass stalks
500 ml coconut milk (2 cups)
1 tbs soy sauce
basmati rice

Instructions

  1. Dice the onion, garlic and chillies.
  2. Wash the shrimps.
  3. Heat oil in a pan.
  4. Fry the onion, garlic and chillies.
  5. Add the shrimp and sear for 2 min.
  6. Clean the lemongrass and remove the outer leaves. Press flat.
  7. Add the lemongrass, coconut milk and soy sauce. Cook for another 5 min. to reduce.
  8. Remove the lemongrass.
  9. Serve the soup with rice.
