Thai Tom Kha Gai Soup

Ingredients

400 g chicken breast
40 g galangal root
2 shallots
2 lemongrass stalks
1 l coconut milk
120 g green beans
1 carrot
6 kaffir lime leaves
2 tbs fish sauce
1 tbs sugar
2 tbs lime juice
1 red chilli pepper
1 bunch of coriander

Instructions

  1. Cut the galangal root into rounds.
  2. Roughly chop the shallots and lemongrass.
  3. Cut the chicken into bite-sized pieces.
  4. Heat coconut milk with the chicken pieces.
  5. Add the beans, finely chopped carrot, lemongrass, lime leaves and shallots and simmer.
  6. Season with fish sauce, sugar and lime juice.
  7. Add finely chopped chilli and coriander.
