Tom Yam Gung

Ingredients

500 g prawns
1 galangal root
1 lemongrass stalk
200 g mushrooms
2 tomatoes
3 small red chillies
2 spring onions
1 bunch coriander
1 l vegetable stock
4 kaffir lime leaves
1/2 tsp nam prik pao chilli paste
3 tbs lime juice
2 tbs fish sauce

Instructions

  1. Slice the galangal thinly.
  2. Cut the lemongrass into 4 cm pieces.
  3. Cut the mushrooms and tomatoes into quarters.
  4. Finely slice the chillies and spring onions.
  5. Finely chop the coriander.
  6. Cook the stock, galangal, lime leaves, coriander, spring onions and lemongrass in a pot for 6 min.
  7. Add the mushrooms, tomatoes, prawns, chillies and chilli paste and cook for another 10 min.
  8. Season with lime juice and fish sauce.
