Thai Tom Yum Soup

Ingredients

250 g shrimps
250 g white button mushrooms
2 red chillies
2 cm ginger root
2 lemongrass stalks
3 tbs tom yum paste
1 l coconut milk
500 ml water (2 cups)
8 kaffir lime leaves
1 tbs sugar
3 tbs soy sauce
3 tbs fish sauce

Instructions

  1. Slice the chillies and ginger finely.
  2. Flatten the lemongrass stalks with the back of a knife and cut into 2 cm pieces.
  3. Mix everything except the shrimps and mushrooms in a pot and cook for at least 30 min.
  4. Cut the mushrooms into quarters. Cook with the shrimps in the pot for another 5 min. and then serve.
