Tomato Soup

Servings: 2

Ingredients

1 1/2 onions
2 1/2 cloves of garlic
1 1/2 tbs butter
1 kg fresh tomatoes
1/2 tin whole peeled tomatoes
3 carrots
30 g fresh ginger
1 tbs sugar
1/2 tbs tomato paste
salt and pepper
100 ml cream (6 tbs 2 tsp)
1 cup water
parsley
thyme
basil

Instructions

  1. Dice the onions and garlic and fry in butter. Finely chop the tomatoes, carrots and ginger, add to the pot and bring to the boil with the water.
  2. Add sugar and tomato paste and cook everything for 30 min.
  3. Add salt and pepper, stirring all the while.
  4. Purée everything with a stick blender, add cream and finely chopped herbs, and serve with bread.
