Vanilla Muffins

Ingredients

100 g butter (at room temperature)
175 g sugar
2 tsp vanilla essence
2 eggs
200 g flour
1 tsp baking powder
125 ml milk
nuts (optional)

Instructions

  1. Preheat oven to 175°C, 350°F or gas 4.
  2. Add all ingredients to a bowl and blend with a hand mixer.
  3. Fold in the nuts if desired.
  4. Spoon into muffin pans.
  5. Bake for 20-25 min. until a light golden brown.
