Apple Cake

Ingredients

1 lemon
700 g cooking apples
2 cups cream
200 g sugar
1 tsp vanilla essence
5 eggs
400 g flour
3 tsp baking powder
icing sugar

Instructions

  1. Zest and squeeze the lemon.
  2. Peel, quarter and core the apples. Cut into wedges and drizzle with lemon juice.
  3. Whisk together the cream, sugar, vanilla and a bit of lemon zest.
  4. Add the eggs one at a time.
  5. Combine flour and baking powder before stirring in.
  6. Pour mixture into a greased springform cake tin.
  7. Distribute the apple wedges over the top.
  8. Bake for 60 min. at 180°C, 350°F or gas 4 for 10 min.
  9. After 50 min., check with a skewer to see if the cake is ready. If it colours too quickly, cover with baking foil.
  10. Dust with icing sugar.
