Apple Strudel

Ingredients

Pastry:
190 g flour
1 egg
a pinch of salt
1 tbs oil
60 ml lukewarm water
melted butter to brush
Filling:
60 g biscuit crumbs
400 g cooking apples
60 g raisins
80 g sugar
1 tsp cinnamon
1 tsp lemon juice
1 tbs rum
icing sugar
whipped cream to serve

Instructions

  1. Work flour, egg, salt and oil into a pastry dough with the water. Cover and leave to rest at room temperature for 1 hour.
  2. If the dough is too sticky, dust with flour. Roll out thinly.
  3. Brush with melted butter.
  4. Quickly toast the biscuit crumbs in a pan with a little butter until golden brown.
  5. Peel and core the apples and cut into discs.
  6. Mix together the biscuit crumbs, apples, raisins, sugar, cinnamon, lemon juice and rum.
  7. Spread the mixture over the pastry and roll into a log. Close the pastry at each end.
  8. Brush with melted butter and bake in an oven at 160˚C, 320˚F or gas 3 for 35 min. or until a light golden brown.
  9. Dust with icing sugar and serve with cream.
