Ingredients

225 g butter (at room temperature)
125 g icing sugar
1 tsp vanilla essence
1 tsp lemon zest
1 egg white
400 g flour
50 g ground hazelnuts
Jam for the filling

Instructions

  1. Mix together the butter, icing sugar, vanilla and lemon zest.
  2. Stir in the egg white (yolk will not be used).
  3. Add flour and hazelnuts and knead well.
  4. Cover the dough and refrigerate for 2 and a half hours.
  5. Roll out and cut into rounds.
  6. For half of the biscuit rounds, cut a shape in the middle. The rest will be the bases.
  7. Heat oven to 180°C, 350°F or gas 4. Bake for 5-8 min.
  8. Spread the bases with jam.
  9. Place the biscuits with the holes in the middle on top.
  10. Dust with icing sugar if desired.
