Carrot Soup with Meatballs

Cook Time: 30 mins

Servings: 4

Ingredients

Soup:
2 onions
2 garlic cloves
1/2 small chilli
olive oil
500 g carrots
750 ml chicken stock
1 tbs yellow curry powder
400 ml coconut cream
salt and pepper
a pinch of sugar
Meatballs:
1 onion
1 garlic clove
400 g beef mince
2 tsp dried oregano
2 tsp thyme
2 tsp grated parmesan
salt and pepper
olive oil

Instructions

  1. Finely chop two onions, two garlic cloves and the chilli.
  2. Sauté in a pot with a little oil.
  3. Peel and dice the carrots, add to the pot.
  4. Add the chicken stock and curry powder and cook for around 15 minutes.
  5. Purée with a stick blender.
  6. Add the coconut cream and simmer for another 5 minutes.
  7. Season with salt, pepper and a pinch of sugar.
  8. To make the meatballs, finely chop an onion and garlic clove. Mix thoroughly with the mince, oregano, thyme, parmesan, salt and pepper.
  9. Roll into bite-sized meatballs.
  10. Cook in a pan with olive oil until golden brown.
