Chocolate Layer Cake

Ingredients

Cake:
3 eggs
100 g sugar
75 g flour
2 tsp baking powder
25 g cornflour
45 g cocoa
Filling:
400 ml cream
200 g dark chocolate

Instructions

  1. Separate the eggs.
  2. Beat the whites with 3 tbs cold water until stiff.
  3. Carefully add sugar.
  4. Slowly stir in the yolks.
  5. Sift together flour, baking powder, cornflour and cocoa, and fold into the liquid.
  6. Transfer to a lined springform cake tin.
  7. Bake at 175°C, 350°F or gas 4 for 35 min. If it browns too quickly, cover with baking foil and test with a skewer after 20 min.
  8. Allow to cool before slicing in half horizontally.
  9. For the filling, heat cream in a pan. Do not allow to boil.
  10. Break chocolate into small pieces and dissolve into the cream with a whisk.
  11. Leave to cool in the refrigerator. As soon as it is cold, remove and whip until stiff with an electric beater.
  12. Spread the filling between the two cake halves and again over the top.
  13. Refrigerate before serving.
