Mole Cake

Ingredients

125 g butter
160 g sugar
200 g flour
2 tsp baking powder
60 g cocoa
100 ml milk
3 eggs
3 bananas
600 ml cream
1 tsp vanilla essence
75 g grated chocolate

Instructions

  1. Combine butter, sugar, flour, baking powder, cocoa, milk and eggs.
  2. Grease a springform cake tin, add the cake mixture and bake at 175°C, 350°F or gas 4 for around 45 min. or until done.
  3. Once the cake has cooled, use a spoon to hollow out a 1-2 cm space in the middle leaving a 2 cm border.
  4. Retain the inside for later.
  5. Peel bananas, slit lengthwise and lay in the hollowed out space.
  6. Whip cream with vanilla and mix with the grated chocolate.
  7. Fill the hollow with cream, and crumble the cake from the middle over the top.
  8. Refrigerate for at least 2 hours.
