Chocolate Nut Biscuits

Ingredients

50 g ground walnuts
125 g flour
1 tbs cocoa
50 g sugar
2 tsp vanilla essence
125 g butter (at room temperature)
1 egg yolk
100 g baking chocolate
Whole blanched almonds for decorating

Instructions

  1. Lightly roast the walnuts.
  2. Mix the walnuts with flour, cocoa, sugar, vanilla and softened butter.
  3. Add the egg yolk.
  4. Refrigerate the dough for 1 hour before rolling and cutting into rounds.
  5. Bake at 175°C, 345°F or gas 4 for 10-15 min.
  6. Melt chocolate in a double boiler.
  7. Spread the chocolate onto the biscuits.
  8. Place an almond in the centre of each biscuit.
