Cranberry Biscuits

Ingredients

200 g butter (at room temperature)
160 g sugar
1 tsp vanilla essence
1 egg
180 g flour
1 tsp baking powder
125 g dried cranberries
90 g grated coconut

Instructions

  1. Cream butter, sugar and vanilla.
  2. Add the egg.
  3. Combine flour and baking powder separately and stir in.
  4. Fold in the cranberries and grated coconut.
  5. Use your hands to form a dough.
  6. Shape into small biscuits (teaspoon-sized), ensuring they are well spaced.
  7. Bake at 160°C, 320°F or gas 3 until golden.
