Christmas Stollen

Ingredients

225 g butter (at room temperature)
500 g flour
200 g sugar
250 g quark or unflavoured fromage frais
100 g raisins
125 g ground almonds
100 g ground hazelnuts
2 eggs
1 tsp vanilla essence
6 tsp baking powder
a pinch of salt
1 tsp ground nutmeg
150 g glacé lemon peel
50 g glacé orange peel
icing sugar

Instructions

  1. Work 175 g of the butter into a dough with all other ingredients.
  2. Shape into a loaf and place on a greased baking tray.
  3. Bake at 150°C, 300°F or gas 4 for 60 minutes.
  4. Heat the remaining 50 g butter, brush over the loaf and dust with icing sugar.
