Crab Fritter Salad

Servings: 4

Ingredients

150 g crabmeat or shrimps
1 onion
4 cocktail tomatoes
1 tsp lemon juice
2 tbs mayonnaise
2 egg yolks
5 tbs breadcrumb mix
1 tbs canola oil
16 radishes
1 lettuce
2 tbs olive oil
1 tbs white balsamic vinegar
salt and pepper
dill

Instructions

  1. Chop up the crabmeat into small pieces.
  2. Chop the onion finely.
  3. Quarter the tomatoes.
  4. Mix the crabmeat, onion, tomatoes, lemon juice and mayonnaise.
  5. Stir in the egg yolks and breadcrumb mix.
  6. Season with salt and pepper.
  7. Shape into small fritters and fry in a pan with oil until golden brown.
  8. Slice the radishes.
  9. Wash the lettuce.
  10. Use olive oil, vinegar, salt and pepper to create a dressing.
  11. Toss everything together and garnish with dill.
