Teriyaki Salad

Servings: 4

Ingredients

mixed salad greens
1 carrot
500 g chicken breast
4 garlic cloves
150 ml mirin (rice cooking wine)
100 ml sake
100 ml soy sauce
white pepper
salt
125 g flour
5 tbs oil
sesame seeds

Instructions

  1. Wash the salad greens. Grate the carrot into strips using a potato peeler.
  2. Tenderise the chicken (cover with cling film and gently press on it with a plate to make it thinner).
  3. Season with salt and pepper and dust with flour.
  4. Cook the peeled garlic cloves in a pan with oil.
  5. Remove the garlic and cook the chicken in the oil for 5 minutes.
  6. Carefully deglaze with sake.
  7. Add the combined mirin and soy sauce and reduce.
  8. Remove the meat, cut into strips and arrange on the salad greens.
  9. Dress with the sauce and sesame seeds.
