Mexican Salad

Ingredients

1 small onion
3 tbs olive oil
1 tbs balsamic vinegar
1/2 lemon, squeezed
salt and cayenne pepper
looseleaf lettuce
4 tomatoes
100 g cheddar
100 g tinned kidney beans
1 avocado
parsley

Instructions

  1. To make the dressing, combine finely diced onion, oil, vinegar, lemon juice, salt and cayenne pepper.
  2. Wash the lettuce.
  3. Quarter the tomatoes.
  4. Grate the cheese.
  5. Drain the kidney beans.
  6. Peel, pit and slice the avocado.
  7. Chop the parsley.
  8. Toss everything together.
