Double Chocolate Muffins

Ingredients

150 g dark chocolate
100 g milk chocolate
250 g flour
2 tsp baking powder
2 and 1/2 tbs cocoa
180 ml milk
110 g butter
2 eggs
100 g icing sugar
1 tsp vanilla essence

Instructions

  1. Grate the chocolate, setting a small amount aside to finish. Combine grated chocolate in a bowl with flour, baking powder and cocoa.
  2. In a separate bowl, combine milk, melted butter, eggs, icing sugar and vanilla.
  3. Combine wet and dry ingredients and work together until smooth.
  4. Spoon into muffin pans and sprinkle the remaining chocolate over the top.
  5. Bake at 180°C, 350°F or gas 4 for 15 min.
