Duck with Orange Sauce

Preparation Time : 1 hour

Cook Time: 2 hour 30 mins

Servings: 4

Ingredients

2 kg duck
150 ml orange juice
4 tbs orange jelly
15 ml chicken stock (1 tbs)
15 ml soy sauce (1 tbs)
15 g brown sugar (1 tbs)
10 g cornflour (2 tsp)
1200 g purple cabbage
salt, pepper
2 small apples
2 tbs vinegar
1 onion
6 cloves
potato croquettes

Instructions

  1. For the duck: Wash the duck and pat dry. Pierce the skin with the fork in a few places. Season with salt and pepper. Roast between 200-220°C, 390-430°F or gas 6-7 for 1 hour with the breast side down. Turn the duck and roast for another 25-35 min.
  2. For the sauce: Mix the orange juice, orange jelly, chicken stock, soy sauce and sugar in a pot and warm up on a medium heat. Mix the cornflour with a little water, gradually add the sauce and bring to the boil.
  3. For the cabbage: Remove damaged outer leaves, cut into quarters and remove the stalk. Cut into thin slices. Add to a pot with 2 cups water, chopped apple and vinegar. Peel the onion, poke the cloves into it and add to the pot. Cook for 45-60 min., stirring occasionally. Remove the clove onion before serving.
  4. Cook the croquettes according to the directions on the packet.
