Fillet of Pork

Servings: 4

Ingredients

500 g pork fillet
350 g white button mushrooms
1 onion
125 g butter
2 tbs lemon juice
1 tbs flour
250 ml white wine (1 cup)
400 ml beef stock (just over 1 and 1/2 cups)
500 ml cream (2 cups)
2 tbs finely chopped chives
4 tbs cognac
salt and pepper
200 g small carrots

Instructions

  1. Cut the mushrooms into quarters, dice the onion, and cut the pork fillet into 2.5 cm pieces.
  2. Fry the mushrooms and onion in a pan with half the butter.
  3. Add lemon juice and flour.
  4. Deglaze with white wine and stock and reduce.
  5. Add the cream. Flavour with chives, cognac, salt and pepper.
  6. Cook the carrots.
  7. Dress the pork with salt and pepper and fry in another pan with the remaining butter for 3 min. on each side.
