Guacamole and Shrimp Avocado Shells

Servings: 6

Ingredients

3 avocados
1 lime, squeezed
1 spring onion
1 red bell pepper
1 tomato
12 cooked shrimp
basil leaves
salt and pepper

Instructions

  1. Halve the avocados, removing the stones.
  2. Gently hollow out the avocado halves and place the flesh in a bowl.
  3. Rub the avocado shells with half the lime juice.
  4. Add the rest of the lime juice to the bowl.
  5. Finely chop the spring onion, pepper and tomato.
  6. Add to the bowl and mix together. Add salt and pepper to taste.
  7. Return the new filling to the avocado shells.
  8. Garnish each shell with 2 shrimp and 2 basil leaves.
