Hearty Chicken Soup with Vegetables

Ingredients

500 g chicken thighs
2 onions
1 leek
1 chilli
4 carrots
1 celeriac root
2 cloves of garlic
salt, pepper, nutmeg
1 bunch of parsley

Instructions

  1. Slice the onions and leek into rings.
  2. Finely chop the chilli.
  3. Peel and slice the carrots.
  4. Clean the celeriac and cut into bite-sized pieces.
  5. Cook all the ingredients except the parsley in a pot with 1.5 l water for 35 min. (The chicken should be fully covered with water.)
  6. Remove the chicken thighs, separate the meat from the bones and put the meat back in the pot.
  7. Season with salt, pepper and nutmeg. Garnish with parsley.
