Lentil Soup

Ingredients

250 g lentils
750 ml vegetable stock (3 cups)
2 onions
3 carrots
1 leek
oil
1 bay leaf
1/2 bunch of parsley
salt and pepper

Instructions

  1. Soak the lentils according to the variety of lentil (see instructions on the packet).
  2. Drain the lentils and cook in a pot with the vegetable stock.
  3. Dice the onions and carrots and cut the leek into rings.
  4. Lightly fry in a pan with oil and then add to the pot, along with the bay leaf and the chopped parsley.
  5. Cook everything for 20-30 min.
  6. Add salt and pepper to taste.
